Name of Recipe: Apricot Nibbles
Number of People: makes 20
Ingredients:
3/4 cup dried apricots
3/4 cup coconut
1 level teaspoon grated lemon rind
1 level teaspoon grated orange rind
1 tbsp orange juice
toasted coconut
Preparation:
Cover apricots with boiling water and let stand for 10 minutes to soften. Drain.
Place the apricots in TM bowl and chop for 10 seconds on speed 5. Add remaining ingredients, knead for 20 seconds on speed 3 until well blended.
If mixture is too dry, add more orange juice; if too wet, add more coconut.
Shape into small balls and roll in toasted coconut.
