« on: September 09, 2009, 07:37:04 am »
Would anyone have the English translation for this dessert which appears on page 97 of the Italian Cookbook?

Thanks

Non sono sicuro - not sure - but does it look like this:

 BAVARESE ALL’ANANAS (x 6)

If so then it goes like this:

Recipe: PINEAPPLE BAVAROIS(x 6)

Ingredients: 400 gr. pineapple syrup, 150 gr. sugar, 3 egg yolks, 3 egg whites, 1 tablespoon lemon juice, 1 packet vanilla sugar, 4 sheets of gelatin for desserts (20gr.). To garnish: thin slices of pineapple and candied cherries to taste.

Preparation: Put the gelatine leaves to soak in cold water. Place the pineapple in the TM: 15 sec. speed4.

Combine egg yolks sugar and lemon juice: 5 min. 80 ° C speed. 4.

Combine the gelatine well squeezed and vanilla sugar: 30 sec. speed. 6.

Pour the mixture into a bowl and let cool.

Beat the egg whites until stiff (you can do this in a very clean TM bowl with butterfly) and gently incorporate pineapple  cream.

Pour the mixture into a mold lightly greased with vegetable oil or almond oil and place it in the refrigerator to firm for the time.

Unmould onto a serving dish, garnish with slices of pineapple, candied cherries and serve.

The advice of Giovanna: You can replace the egg whites with 250 g of whipped cream.

Thanks so much.  The Italian copy I have here seems to be a little different but I'm sure that it's close.  The pic in the book looked so nice that now our weather is starting to get a little warmer I thought it would be a good one for Summer!!!!

Cheers
