Chicken curry pasta "continental pasta and sauce style"

I used to love the chicken curry pasta and sauce mix.  My grandma used to make it when i would stay over and cook it for dinner by adding some cooked chicken and maybe vegetables with it.  She didnt like cooking much and cooked easy stuff.

I had some leftover roast chicken tonight and decided to give it a go.  My first attempt at making a recipe and it was amazing.  Tastes just like the packet one i remember.  All the kids loved it too. 

1 onion
1 large clove garlic
30g olive oil
1/2 teaspoon keens curry powder
180g cream (i use the long life one)
500g water
300g pasta spirals or macaroni
50g vegetable stock
1tablespoon cornflour
1/2 zuccini
Leftover BBQ chicken, diced

Directions

1. grate zuccini on speed 7 for 5 seconds, then set aside
2. Put onion and garlic in bowl and dice for 5 seconds on speed 5.
3. Scrape down sides, and then add curry powder and oil, then saute for 2 mins speed 1 100deg
4. Add stock, water and cream to bowl, then place pasta in basket along with reserved zuccini.  Give the pasta a quick rinse to wet it
5. Place basket in bowl and cook for 20min varoma temp speed 3. 
6. check pasta is cooked, then remove basket and set aside
7.  Add cornflour to bowl and mix for 30 seconds on speed 4. 
8. stir pasta and sauce together, and then add diced chopped up roast or BBQ chicken. 

This is super mild, feel free to add a little more curry powder to give it more kick. 

Super easy and delicious way to use up leftover BBQ chicken.

I would say 4 serves.  It was enough for my family of 5, but my kids have small appetites.

I made half quantity of this recipe but found I should have used a smaller spiral pasta (or macaroni) and perhaps given it a stir during the cooking. I cooked it 6 minutes longer then added it to the sauce and cooked it another few minutes so in the end I was quite happy with it.  I didn't chop any of my veggies as long as there are no children I have to hide veggies from.  I used 1 tsp curry powder, added some 3 cm pieces of broccolini on top of the pasta, at the end I added some parsley then topped off with grated parmesan cheese. 

It was delicious and I've enough for tomorrow night's tea.  Thanks for your recipe Kristy.

Yes it was thanks girls and I had all the ingredients on hand - I usually have some BBQ chicken pieces in the freezer plus I had a couple of packs of LL cream as well.
