I made this for tea tonight, following the recipe ingredients, mostly, but with a different method. I had very few vegies in my crisper, so had to resort to frozen ones. I used a pea, corn and carrot mix.
This is my modified recipe:
1 onion, quartered
2 carrots, rough chop
2 celery sticks, rough chop
bunch mint leaves
150ml water
250ml red wine
1 Tbsp Worcestershire sauce
1 Tbsp tomato paste
1 Tbsp chutney
good pinch ground pepper
500g minced lamb
1 - 2 cups frozen mixed vegies
Chop onion, celery and carrot 3 seconds/speed 5
Sauté 2.30 minutes/speed 2.
Add everything else, except lamb and vegetables.
Place lamb mince into basket and insert into bowl.
Cook for 25 minutes/100/speed 3, MC on.
Break up mince with spatula and place into Thermoserver. Break up with a fork if necessary.
Replace basket in bowl,
Add frozen vegies to basket and cook a further 5 minutes/100/speed 2, MC on.
Remove basket and place vegies in with mince.
Add 2 - 3 Tbsp gravy mix or a flour slurry to remaining sauce.
Cook for 3 minutes/speed 2/100, MC off, or until thickened.
Pour into Thermoserver and mix together.
Place into casserole and top with a mixed mash. I also added some mint sauce to the sauce to see how that went. It was delicious.
