I'm using this recipe to trial the soak method. I've milled some barley & added the milk & a tsp lemon juice to "soak"- it's like a dryish crumb mix.
Is that right? Or by soaking does it mean it has to be wet?

After stirring the milk through really well mine was like a super thick batter. No pooling liquid, but no crumbs either. Perhaps you may need a tiny bit more milk VHJ. Hope you enjoy it as much as we did.

Thanks Chelsea. After adding the other ingredients it seems much better so decided to go with it and see what happens. It's in the oven now. If i've mucked it up and it's a little dry/heavy we will just have to increase the amount of custard or icecream (or both) we have with it. OHHHHHH tough times ahead !

The taste of the end product was very nice. Next time I make it I will either reduce the amount of barley (& mill it a little more) or add a little more milk. All in all I'm happy with my first effort at milling and soaking whole grain so it's onward and upward from here

My hubby's all time favourite dessert is lemon self-saucing pudding so I tried to make it tonight using soaked whole-grain spelt flour and a recipe quite similar to this. It was ok, but the soaked flour was a little "crunchy". I think the pecans must hide any "crunch" in this recipe and perhaps some shredded coconut may do the same for a lemon version. Hubby was still quite impressed with it but did ask why it wasn't yellow like the packet one his Mum used to make. Bless him!!!

Chelsea, you'll have to perfect that one. I've never heard of lemon self saucing pudding, and loooove lemon desserts.

That is a lovely recipe for sure. I am just trying to convert my lemon pudding recipe to a soaked whole grain pudding. A little tricky, but will be worth it.

Good luck with the conversion. May need to blend the hell out of the sprouted grain with a little liquid to smooth it out.
