Mango Fluff

This recipe is based on Karonjulie's Banana fluff.  I have doubled the recipe and substituted the banana with fresh Mango. It is low in sugar and fat.

Makes 6 very generous serves.  Best made a day ahead,  but will keep for several days in the fridge.

2 packets of low- cal Mango and Passion fruit Jelly sachets.
500 mls of boiling water
10 g of Xylitol,  or other sugar substitute, to taste
250 g. mango flesh
400 g natural low-fat yoghurt.

Dissolve jelly crystals in boiling water.
Place all ingredients into TMX bowl and mix, speed 10 / 1 minute.
Pour into serving glasses and set in fridge.

Serve as is or with mango cubes and/ or passion fruit.

Katiej - I only made half the recipe and it made 4 nice sized serves.  We served it with fruit salad.  I used Stevia as the sweetener.
Everyone enjoyed it.  A lovely light dessert not jammed packed with calories.
My DH was very happy he was able to have the 4th serve Monday night.

That looks so light and refreshing, I only have one put of lemon jelly and two mangoes that need eating so I will make up a version of this, I don,t buy low fat yogurt but have some really yummy Gippsland  yogurt, probably only available here in Victoria.   Thanks chookie.

Cookie,  just enough to balance the sharpness of the yoghurt.  Probably 1 dessertspoon.

Made this today with a ripe mango that needed using up.  DH and the kids had it for dessert tonight, and gave it a huge thumbs up, and asked me to make it again.  I would think this is a very versatile recipe that could be made with all sorts of fruits and fruit-flavoured jelly.  I have also seen a similar recipe using lite-ricotta instead of the yoghurt.  Thanks Chookie!

Thanks Karen,  glad family liked it.  Mine do also.  I made some for the CFA with Strawberries. Set it in coffee take away cups. Can't see why you couldn't use ricotta.

Just bumping this recipe!
I have made this for Christmas day and another batch today in preparation for lunch tomorrow.
I make it in an old fashioned tupperware mould for the wow factor.
I use normal jelly as I don't like artificial sweeteners in the diet jelly.
There is never any of this left over. It is a great recipe for this hot weather.
