Creamy Broccoli and Potato Soup
Serves 4 easily
Ingredients
2 teaspoons EVOO
2 rashers of bacon
1 onion
1 clove garlic
3 potatoes
1 litre vegetable stock, I used water and 4 teaspoons of stock concentrate.
approx. 500g broccoli, including stems
1/4 cup cream, optional
Preparation
Place bacon, onion and garlic into bowl. Speed 5 for a few seconds.
Add EVOO. Sauté with MC off 2 minutes. 100 degrees, speed 2.
Add roughly chopped potatoes, chopped broccoli and stock. Cook 20-25 minutes, 100 degrees, speed 3.
Check that vegies are tender and if so carefully blend by raising speed slowly to 8/9 for 40 seconds.
If you wish you can stir cream through it to serve.
