Carrot Jam/Marmalade recipe from my Spanish book
500g peeled and cut in chunks, carrots
250g water
pinch salt
500g sugar
the grated lemon peel of 1/2 lemon (make this first in
!)
juice of whole lemon
Place carrots in and chop 4 seconds on speed 5
Scrape down, add water and salt and cook 25 mins, 100º speed 1
Blitz 20 seconds speed 6
Add sugar, lemon peel and juice, program 10 mins, Temp Varoma, speed 1.
