Hello - Received my Thermomix Christmas Eve.....

- used it often Christmas Day and it has hardly gone cold since.  Made apricot jam with fruit fresh off the tree - first time used
CSR Smart sugar (half sugar and half sweetener) but result was too sweet.  The second time I used CSR Logicane but 450g not the 500g the recipe recommended and it was perfect - however the jam was a bit runny - even after 5 minutes extra cooking.

Hi and welcome to the forum. Did you try cooking the jam for a little extra time on Varoma with the basket over the bowl without the MC? This sometimes helps to boil off some of the extra liquid.

May all dairy items in your fridge be of questionable vintage.

Welcome sueloy - as suggested above - try cooking at Varoma temp for a while with slightly higher speed and on reverse if you want some texture.

Welcome sueloy, I had similar problems.   Used 2/3 of required sug,   but next time will add some "jamsetta".

Welcome! Another thing to remember is to use slightly under ripe fruit for jam.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I didn't know that MJ, what are over-ripe apricots good for then - stewing perhaps?  Had a visitor over Christmas who gave me 1/2 a bucketful of green apricots and boy did they ripen quickly ??? ??? Have them in the fridge now to slow them down I hope but was thinking of doing a batch of jam until I read your posting.

I forgot to say that I add the kernels from the stones (crush between two bricks and try not to smash kernels) as I used to do for my mother.  I added these in 5 mins before the end of the cooking.  I did know about green fruit but our apricots were quite green one end and ripe the other - I guess the balance went to the ripe.

I often use ripe apricots,  just add a bit of lemon juice and if necessary "jamsetta".
