Even in the heat of battle making Christmas cookies never forget about cooling: baking sheets must be cold before placing another lots of cookies on to be baked. The finished cookies should also be well cool before you continue to decorate or glaze - but never on the hot baking tray. Take them away from the plate and leave it on a cooling rack until cold.
