Mexican Seasoning recipe?
« on: January 13, 2010, 12:09:47 pm »
We are huge  taco/burrito fans and have been using that horrid pre-packaged old el paso seasoning  :-[ since going additive free it constantly plays on my mind, I have tried a few recipes of the internet but am yet to find one that we like, does anyone have one that their family loves that they can share?

I just make a batch of the sauce from JulieO's enchilada recipe (on the forum in mains section) and stir a third of it into my cooked meat. I freeze the other two thirds in ziplock bags ready for next time.  It isn't a dry spice mix (perhaps not good for small taco's) but is very tasty for burritos.  :)

I've just added the fajita seasoning mix to 'spices & seasonings' - will add the complete marinade recipes (which include the spices) in the marinades/sauces section.  :)

I decided to put both the chicken and the beef fajita recipes in the Main Dishes section, as they're not really sauce recipes.  :)  They're there now.  I'll have to make them soon so I can add photos!  (We usually do a batch of each whenever we have fajitas.)

I ran out of Taco Seasoning recently and made my own with: paprika, onion powder, garlic powder, powdered beef stock, cumin and chilli powder. Just keep adding until it tastes right!

A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
