I don't recall any recipe being posted on the forum from this book so I will post the recipe here - you never know, it might be enough to encourage others to buy the book. I think a few sample recipes from each book does help sell books.
100-120g white onions, cut in halves
1-2 garlic cloves
5 sprigs parsley, fresh, plus extra for garnish
30g butter
150g white wine
100g water
1/2 tsp salt
1 pinch ground pepper
20g cornflour
60g crème fraiche or cream
200g scallops (with or without the roe)
150g mussels, fresh, cleaned and removed from shells
100g prawns, raw, peeled
Place onions, garlic and parsley (keep a few sprigs for decoration) into mixing bowl and chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
Add butter, wine, water, S & P and cook 8 min/varoma/speed 1.
Add cornflour and cream. Place scallops into varoma dish and mussels and prawns onto varoma tray. Place varoma into position and steam cook 10-12 mins/varoma/speed 1.
Set varoma aside and blend 30 sec/speed 7.
Arrange shellfish in mini-casserole dishes and cover with sauce. Serve immediately, garnished with a sprig of parsley.
