JUICY LEMON CAKE300 grams of flour
300 grams Sugar
1 teaspoon baking powder
1 packet of Vanilla Sugar (2 Teaspoons Homemade!)
4 eggs
150 grams of Oil
150 grams of sparkling water (or 7 up or sprite)
50 grams of Lemon Juice
Zest
PreparationPlace the flour, baking powder and sugar in Thermomix and programs 8 seconds / Level 4.
Add all the remaining ingredients and Program 2 minutes / Level 4.
Befits down to the midpoint of the beat with the help of the spatula!
Now just place the dough in a well greased (hope you say it like this
)Cake Pan and Bake in preheated oven 180 º for 50 minutes!
The result is WONDERFUL - A Super juicy cake even after a few days (when there is anything left of course
)
I did a Orange version as well but prefer the Lemon....

huilink - I followed the instructions exactly, except that I cut down on the sugar to 200g (since I was using 7 up), but I'm not sure what went wrong. It came out very hard. I thought it wasn't cooked enough, so popped it back into the oven for another half an hour, but still came out the same. I wonder if it will be better if I used more baking powder?
