Chookie's Old fashioned, cold pineapple pudding.

Old fashioned, cold pineapple pudding.
[Aunty Glad's]
1st mixture
Ingredients:
1/4 cup sugar
1 egg
1 cup of milk
3 or 4 passion fruit, (or 1/2 a tin of passion fruit 85g)
Method:
Place sugar into TM bowl and zap on speed 7 for 3 seconds.
Add the egg and beat 2 mins. on speed 5.
Add milk and mix for 30 seconds on speed 3.
Add passion fruit and mix on speed 2 for 20 seconds.
Tip into a glass bowl.
2nd. mixture
Ingredients:
1 tin of pineapple pieces (16 oz. or 440g)
1 packet of yellow jelly
Method:
Tip pineapple pieces with juice into TM bowl, add jelly crystals. Cook for 5 minutes at 100
o
C on
reverse and speed 5.
Tip hot mixture on mixture in bowl and stir briefly to incorporate.
Cover and set in cool place.
Tip:
Best made day before , should separate into 2 layers

JD - I made this today Chookie and have just snuck out to the kitchen to have a spoonful - it wasn't set at teatime. Very nice. I can imagine it as a crepe filling too.
It worked for me Chookie, separated into the 2 layers as the recipe said. It would be nice served in stemmed individual glasses too for visitors.

A recipe that can be prepared with goodies from the cupboard for Aunty Glad when she says she's staying for tea !!!

JD, this should set up to be firm. may take longer this hot weather. I'll make it again tomorrow and see what happens.

JD, made this pineapple pud. this morning. Will have to wait until tomorrow to see if it set. Used low sug. jelly and only had a tin of crushed pine. Will report back. Hope we can get it to work for you as it is handy as you can make it a day or two before you want to eat it.

A friend of mine is moving into a retirement village and gave me all her cookbooks (she doesn't cook and most of them had her Mum's name on them). There was one put out by Sagasco back in 1959 called 'Better Cooking...by gas' which was an Adelaide publication and there are some lovely old fashioned recipes in there. I was only going to write out a few recipes and pass the books onto another of her friends as I have no more room for more books unless they are TMX ones but there were far too many which took my fancy so I will certainly be keeping this book. Hopefully a few converted ones will pop up on the forum.

Made the cold Pineapple Pud and it set up nicely. JD, you are certainly lucky to get some old cook books. I still have a few recipes that have been passed down, and will gradually convert them. Will be looking forward to see what you can do.
