Try making Cuban Rice. Just gently saute an onion and garlic until nicely caramelised adding chopped chilli towards the end. Then fold this through your rice together with the adzuki beans and reheat. DEEEElicious.
Re quantities, for my family of 2 large and 2 small(ish) I use 250g rice, 1 large onion, 3 large cloves garlic, 1 medium red chilli and 250g adzuki beans (sometimes add a bit of bacon for extra flavour). But experiment to find the combination that suits you.
