naan bread or chapatti bread

Hi All

I have a customer who is interested in a recipe for naan bread or chapatti to go with the tomato/lentil dahl.  I imagine there is something in the new indian cookbook, but I don't have this one yet.  Can anyone help?

Not TMX, yet  ;) but:

Chapatti:
125 g wholemeal flour
115 g plain flour
1 tsp salt
30 ml olive oil
175 ml hot water

Mix!
Knead until smooth and elastic.
Divide into 10 pieces, roll into balls, set aside for 30 mins.
Heat heavy based frying pan and LIGHTLY coat with oil. Rolle ach ball on floured counter to about 20 cm round.
Cook for 30 seconds on each side, until brown spots appear. Repeat. Wrap in paper towel to keep them soft as they cool. Serve warm or at room temp.

Naan:
2tsp dry yeast
225 ml warm water
50 g sugar
45 ml whole milk
1 large egg
2 tsp salt
500 g bread flour
1 garlic clove
50 g unsalted butter

Prove yeast by mixing sugar and water together in jug, sprinkle yeast on top, and set aside for 10 mins, until mixture has become frothy/foamy.

Combine other ingredients, except for garlic and butter. Add water mixture and knead until dough is smooth. Place in lightly oiled bowl, and turn dough over so that it is covered with light film of oil. Cover with clean damp paper towel and leave to prove in warm spot for 1 hour.
Punch dough to deflate it. Cut it into 14 egg-sized pieces. Roll into 14 balls and place on lightly oiled baking sheet. Cover with paper towel and set aside for another 30 mins.
Use pizza stone or similar where possible, and preheat oven to 230 C. Use fingers or rolling pin to shape dough into oblong shapes, roughly 15x10cm. Place first naan onto hot pizza stone, and add as many more as you can fit. Bake for 8 to 10 mins, until puffy with golden brown spots.
While naan are baking, melt butter with the whole peeled garlic clove. Brush hot naan with butter as they come out of the oven.

These are taken from the wonderful book 500 pizzas and flatbreads by Rebecca Baugniet, New Holland Publishers, Australia. It's a small square book with hundreds of pages, so it's thick, and there are several others in the series. They are in Robins Kitchens. I love this one for the many, many different pizza bases and bread recipes in there :) We had lovely Sir Lankan coconut roti from here the other week when we had an Indian night.... they were lovely with curries and biryani :)

if you can get your hands on an indian cookbook it has a great naan bread recipe, really easy to do and tasty

I make my Naan bread from the recipe in the 2009 calendar. I find it really nice.
May all dairy items in your fridge be of questionable vintage.

Don't have the calendar at hand, but it likely to be the same as the one on Tenina's website as it is her recipe ;)

Here is the Peshawari recipe from the indian cookbook if you want to try it. The standard naan recipe  is a prerequisite to the Peshawari so I scanned both - they would be very long to type up !
I haven't tried either of them as my oven won't be suitable to bake these.
