I am not low-carb, but a couple of things with cauli. If you want it as mash then you can just blitz it and cook with some water or stock on 80 and then blitz again to make it smooth - just adjust how much moisture - not too much.
Alternative that i have done a few times - get the florets and place them in the TM bowl and blitz them on REVERSE
for a few seconds and it will take on the texture of cous-cous ? which you can steam for a short period (or eat raw)
