Vegetable Gratin (with photo)

It is nothing new in fact. I believe you already know about it. I just wanted to write my way of making gratin.
The amounts of the ingredients are indicative. It is up to your palate.
With the vegetables I had I used the following amounts and procedure

Vegetable Gratin:

Ingredients:
1 zucchini
1 eggplant
2 tomatoes
2 portobello mushrooms

1 clove of garlic
10g parsley (leaves only)
1 tbsp EVO (+some more for drizzling and brushing)
Salt
70g bread crumbs
30g parmesan (15+15)


Preparation:

Cover oven tray with wax paper. Brush it with a little EVO

Cut eggplant in half widthwise and then cut them again lengthwise (You will have 4 slices in total). Sprinkle with some salt and let them rest for half an hour in a drainer

Cut zucchini in half widthwise and then cut again in half lengthwise. (4 slices in total) Scoop out the inside, set aside and place zucchini slices in oven tray (Don’t scoop out completely)

Halve tomatoes. Remove the seeds and set aside. Place halved tomatoes in oven tray

Remove gently the legs of mushrooms without damaging the body and set aside. Place mushrooms in oven tray


Grate parmesan for 10 seconds speeding up from 2 to 9 and set aside

Put garlic and parsley in TM bowl. Chop for 5 seconds on Speed 7.

Add pulp of zucchini, tomato seeds and mushroom legs. Chop for 5 seconds on Speed 6

Add bread crumbs, 15g of parmesan and a little salt. Mix for 4 seconds on Speed 4


Drain eggplants. Place in oven tray.

Sprinkle all the vegetables in the tray with a little bit of salt. Stuff them with the veggie mixture you’ve prepared.

Sprinkle on the top with the remaining 15g of parmesan. Drizzle with some EVO

Bake them in preheated oven at 160°C for 50-55 minutes. (Last 5-10 minutes you may want to turn on also grill option of your oven)

Tips/Hints:

Gratin with green, red or yellow pepper results great as well. I didn’t use any just because I didn’t have them at the moment

To have a different taste you can add also a few basil leaves.

This is a nice variation on our normal au gratin vegies farfallina.  We normally cook the vegies and cover them with a cheese sauce whereas this recipe is unique in that the vegies are stuffed.  Sounds delicious and certainly one to try.  MJ has put on something a little similar but served hers with a tomato sauce. Thanks for this.

Well, as a person who is crazy about cheese also your version sounds wonderful!  ;)
I'd better be careful with cheese though, as a very thin person i have high cholesterol just because of my passion for cheese!

You can try also this version of gratin every once in a while. It's quite light  :)

Made these for tea tonight to accompany pan fried fillet steak with mushroom sauce and some oven chips.  Only used zucchini, mushrooms and tomatoes but next time I will buy the biggest vegies I can find so that we can taste more of the vegie itself. Very nice though farfallina but next time I make them I know they will be even better. As you can see from the photo, they were slightly overcooked because the vegies were too small.

I am happy you liked them. For me they are great to serve together with meat as you just did!

When you have small veggies you may want cut them in half only lengthwise. So do I
About overcooking, cooking times may differ from oven to oven. You can try to reduce cooking time  ;)

I did think that with the tiny zucchinis but decided to follow your instructions to the letter. You soon learn what you have done wrong for next time and it is better to experiment on DH than visitors  :-)) :-))

This is exactly what I do:)
I try all new recipes first on Stefano! :) and if they come OK i make also when we have guests!

I don't know if he is unlucky or lucky because he gets to try a different plate every time I cook  ;) :D

This is way less labour intensive than the one I make. I'll try this when I can get to town to buy and eggplant.

Easy as too MJ, make ahead and just pop them into the oven.  I love recipes like that for visitors.

I like that they are easy to do, tasty and light
I like also how they look in the plate next to beef for example
