Healthy cookie cutter dough?

I've just bought DD some great character cookie cutters from America.  Problem is, she's supposed to be low gi, so low sugar.  The only recipes I can find are "sugar cookie" recipes - white flour, white sugar.

Does anyone have a healthy cookie dough recipe, suitable for cookie cutters?  Maybe with some ground down rolled oats to make them low gi?

I made these this morning.  Much lower sugar than any other recipe I've seen, so a big improvement

I haven't tried these yet but filed it away when I was searching for another recipe the other - it looked a good recipe.  I liked the use of almond meal.  I would probably just pop whole almonds in first and grind them.  Note I've done a guess-conversion for the speed.

125 gr flour
1/2 tsp baking soda
1/4 tsp salt
50 gr preferred sugar
40 ml preferred vegetable oil
40 ml milk of choice
1 tsp fresh grated lemon or orange peel
Splodge of vanilla
1 tbsp almond meal

Turn on the oven to 180°C. Line a tray with a baking paper.
Combine all dry ingredients in a TM bowl.  Add wet ingredients and mix on about speed 4 till it all comes together.
Sprinkle the working surface with the almond meal and place on the dough. Roll into a 1/2 cm thin crust. Cut cookies with your favorite cookie cutter. Arrange onto the prepared tray. Dust lightly with icing sugar.
Bake about 10-12 minutes.

The vanilla would give a nice flavour too.  Will have to try these.  Thanks!
