Green Goddess Rice

Name of Recipe: Green Goddess Rice
Number of People: 4 - 6 serves
Ingredients:
250g raw basmati rice
1 avocado, flesh roughly chopped
1 cup firmly packed basil leaves (I purchased a 20g packet)
Juice of 1 lemon
3 tblspns EVOO
65g water
S & P to taste

Preparation:
Cook the rice as per EDC instructions (I just heated up some I had in the freezer)
Place in a serving bowl.
Add the remaining ingredients to the TM bowl and puree for a few seconds. Add more water and puree until the mixture is the consistency of sour cream.  I found it didn't need any extra water. Fluff the rice and gently fold the dressing through it.  Check for seasonings and add more if required. Serve immediately.

Judy are you able to see/smell or taste the avocado? My mob won't eat it if you can. :'(
May all dairy items in your fridge be of questionable vintage.

I think the basil & lemon juice are the predominant flavours Cookie and once pureed I'm sure they wouldn't even know there was avocado in there.  Would be a good test though, some people can smell something they don't like a mile away  :D :D
It just looks so nice and is a change from white rice.

That looks like a great recipe. Thanks.  I love all those flavours. I'd add parsley too for soem extra freshness and goodness.

I think I'll give it a try and see what happens. DH can smell coconut very easily. I think it may be the texture of avocado they don't like.
May all dairy items in your fridge be of questionable vintage.

Judy,  love the look of this recipe.   I was wondering if the pesto that I make in the summer and freeze would be OK.?

I certainly would think so Chookie.  I also still have some packs in my freezer, didn't think to use them and just add the avocado  :-)) :-))

Yes TMXer, Amanda posted the dressing and I love that too. There is no reason that dressing couldn't be used if you have made it but this recipe has less ingredients and is therefore cheaper to make if you have to buy the herbs.

Thats a great idea for hiding Avocados Judy. I mix a lot of pesto under potatoes, millet or pasta, never thought of rice  :)
