Chicken Breast with Capers, Anchovies and Sundried Tomato.:
Four:
Ingredients:
4 chicken breasts
24 leaves of spinach, silverbeet, cabbage or lettuce
4 anchovies
2 tablespoons capers
35g sundried tomatoes
1 tablespoon EVOO
2 cloves garlic
pepper
Preparation:
Steam the spinach until just soft and remove from Varoma.
Place anchovies, capers, garlic, sundried tomatoes and oil into bowl and turbo once, quickly. You need these chunky. Add the pepper.
Place some spinach leaves together to make large enough to cover a chicken breast.
Place the chicken breast on the top and place ¼ the anchovy/garlic mix on top.
Fold the spinach around it and place in Varoma.
Do the same for the other 3 breast.
Place one litre of water into the bowl and place Varoma on top.
Cook at Varoma for 20-25 minutes speed 1.
Serve with vegetables which may be cooked in the Varoma as well if you have the room.

I adapted this from the WW Kitchen book.
I used silverbeet instead of spinach.

JD - this is a wonderful way to cook chicken breast fillets. So moist and succulent. My chicken breasts were fairly large (but not the largest available) so they took 25 minutes to cook through and I was able to heat the potato casserole on the tray above (I'd made this in the varoma over the weekend so it was cooked and only needed heating), carrots and sweetcorn in the steaming basket and then popped the asparagus in on top of the chicken with 5 minutes to go.
With some mouthfuls of the chicken where the mixture was a little too heavily coated, I decided I don't like the taste of capers but where there was a slight tang only, it was really nice. I am going to try this with the capsicum & sundried tomato dip as a topping. Thanks Cookie. These were too big for us so we shared one and I will chop the other one up and put it in a pasta dish tomorrow. 2 meals for $4 - can't beat that!

mmm I'm tempted but the anchovies are putting me off. What else could I use?

You can cook it without anchovies and just adjust with some more salt or a bit more kapers as they usually are salty. Anyway i think you should test yourself and try to use anchovies as when blended with other food they do not taste as strong and gives a very nice flavor.

VHJ, I was never an anchovy lover myself but this forum convinced me to try it. I still wouldn't eat them whole but mixed in with other ingredients will be fine. I have put this recipe of Cookies on my 'to do' list as is.

That's a potato & caramelised onion casserole. I haven't posted the recipe as I will do a bit more work on it. I cooked it from scratch in the varoma a couple of days ago just to see how it would turn out. Raw potato takes a long time to steam, even when it is cut very thinly but whilst it was cooking I made the most of it and cooked a couple of batches of rice in the steaming basket for the freezer and of course could have cooked some vegies on the tray also. I was looking for an alternative to mashed potato.

Good work cookie1 - to make it easier to roll the spinach leaves you can place the leaves on a tea towel (clean) and then the breast on top to help roll for those trying it and having troubles getting the spinach around the chicken.
