Preparing Soffritto / Mirepoix in TM31

Another tip from Bimby's site

Preparing Soffritto / Mirepoix in TM31 - the base for many soups, stews, etc

Ingredients:
- Onion cut into quarters (in the quantity desired)
- Celery into small pieces (in the quantity desired)
- Carrot pieces (in the quantity desired)

Preparation:
• Put all the ingredients into the TM bowl, chop for10 seconds on speed 7.

Hint:
The prepared soffritto / mirepoix can be frozen in ice cube containers and stored ready to thaw and use.

It is very logical isn't it? I'm with you Amanda, why didn't I think of that before.  It gives you a head start in the preparation of meals too.
May all dairy items in your fridge be of questionable vintage.
