I went with a friend ( who has an Aga) in 2004 to a Mary Berry Christmas Workshop at her home in Penn.This is one of the stuffing's we had for lunch and it's delicious.We also came away with all the recipes that they demonstarted that day.This is how it's written:
Apricot and Chestnut stuffing
225g pre-soaked, dried apricots.
1 pint water
1 large onion, coarsely chopped.
75g butter
225g frozen chestnut,thawed and roughly chopped ( available at waitrose)
225g white breadcrumbs
generous bunch of parsley, chopped
salt and pepper
Chopped apricots into small pieces, the size of raisins
Measure 1pint of water into a pan, add onion and apricot pieces, boil for 5 minutes,drain.
Put breadcrumbsinto a large bowl.Melt butter in a pan and pour half of the butter onto the breadcrumbs.Add chestnuts to remaining melted butter and lightly brown.Mix together with the apricots, onions and parsley.Season well and taste.
Turn into a buttered, shallow ovenproof dish and bake on the floor of the roasting oven for about 25-30 minutes until crisp.
serves 6.
The other recipe has sausage meat in the ingredients, so that's no good.
