I have 14 very juicy lemons...

So please, lend me your lemon recipes!!! for things that I can preserve.

Or else that's a lot of lemon butter ;) ;D.

Grate off the zest, put it aside.

Juice all the lemons and freeze the juice in ice cube trays and store the fully frozen cubes in zip lock freezer bags.

Add the grated zest to half a pint of heavy simple syrup  (2 part sugar to one part water) simmer gently for 30 minutes - do not boil.  Store in the fridge and use whenever you need a strong lemon flavor.

Oh the lemon syrup idea sounds great! How much zest roughly to say 30 minutes of syrup? Cause they are large lemons and there are 14 of them so the further I can make this go, the happier I will be :).

For that many large lemons, make a liter of simple syrup.  You will have a very strong syrup that can be diluted with water. 
Taste it after diluting.  The zest should sink to the bottom of the jar and try to leave it undisturbed, otherwise you will need to filter  it if you are going to use it in drinks or ??.  It doesn't matter if it is going into a marinade or other mixture that includes herbs and spices.

A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Are you air drying this? If so how long are you leaving it out? Sounds great, going to give it a go. Perhaps you should post this under spices or something. Would be great with fish.

These are *really* juicy so - if I took the rind off with a grater for lots of things, then juiced them lightly for lemon butter, could I then use the lemons for your cake? Cause I'm getting 40+ mL of juice out of each lemon and that seems a lot :) so I could get even more bang for my buck.

you might get away with a light juicing but you need the rind for the whole lemon cake - you use the whole lemon  ;)
