Roast Beetroot Soup with Creme Fraiche

Roast Beetroot Soup with Creme Fraiche:
Serves 4:
Ingredients:
3 medium beetroot,trimmed
1 clove garlic
1 tablespoon EVOO
1 small onion
1 carrot
1 potato
2½ cups vegies stock (use TMX stock and water)
1/4 cup creme fraiche


Preparation:
Wrap beetroot in foil and roast at 200 degrees for 1-1½ hours.
Wrap garlic in foil and add 20 minutes before time is up.
Put potato, onion and carrot into bowl and chop speed 5/10secs.
Add EVOO. 100 degrees/speed 2/ 5minutes.
Add the other ingredients except creme fraiche and beetroot.
Cook 10 minutes/100 degrees/speed 1.
Add the cooked,chopped beetroot.
5 minutes/100 degrees/speed 1.
Puree by slowly turning dial up to speed 9/40 seconds.
Serve with creme fraiche stirred through and basil leaves.

Tips/Hints:
This has quite a strong beetroot taste. You may like to add cream or milk or simply more stock.
I have adapted it from a Women's Day recipe.

Looks like a bowl of sauce. Not sure I would like beet root soup. I like beet root , but soup?? I don't know.
Bit like lettuce soup, it sounds disgusting but I have been told its really yummy.

The Ukrainian folks and probably Russia and Poland  make a beetroot soup called Borscht. It isn't like this though. More a vegetable soup with beetroot in.
DH liked the soup Judy but DD felt it was too 'beetrooty.'

I don't think my DH would like it, he is not a real beetroot person.  That revelation took many years to come out, he had just been putting up with it if I served it but a whole bowlful of the stuff might be a different matter LOL

Men ;) My DH informed me a while ago that the chicken I had been buying to roast always made him feel ill. We must have had 20 before he told me. They were from a reputable place and all the rest of us were fine. It must be something in the chicken or ???   He always says he is an omnivore and eats everything. But he can smell/taste coconut at 50 paces and dislikes feta. Apart from that he is pretty good food wise.

Hi Cookie, do you peel your beetroot before or after roasting?  I have a lot of beetroot in the garden that I need to use up.  Will be making a beetroot relish but thought I'd give the soup a try also.  I grated beetroot into sausage rolls the other day which gave an interesting twist, but didn't look too appealing as it turned the pastry pink.

Sorry for the late reply. I always peel my beetroot after I roast them. I don't know if it is true but my Mum always used to say peel it afterwards or it will 'bleed' when cooking.
