bone broth and nutrients?

I made the chicken broth last night - tbh it was annoying as so little space in the basket and i hated having to cut the chicken carcass up in pieces, 200g was a tiny proportion of it - but definitely no room for more in the basket..a shame as i had thought this would be a good use of the thermomix.

I have read (re the Weston A Price diet) that the fantastic nutrients of bone broth are partly from slow simmering for hours and it has been suggested that a pressure cooker would destroy a lot of these nutrients. So I was wondering how the thermomix sits in relation to that. If the whole point of the nutrients isn't there anymore it seems too much hassle to do often..

I still do my bone broths on the stove in a heavy stock pot, for hours, Weston Price style... But I also make the vege stock paste, chicken stock paste and beef stock paste in the Tmx, and they're great for everyday use as they don't take up heaps of room in the fridge/freezer!  But if I want the gelatinous stock (eg. when we have colds, or for a soup) I do it the old fashioned way.

I still do my bone broths a la Weston A Price too, I just love it that way. I have made the vege stock but rarely use it, preferring my broth stock. I really love my TMX so much but stock is something I really enjoy cooking on the stove top.

I manage to shove a whole chicken carcass and some vegies in the basket? It's a squeeze but it always fits in, lol.

I'd say that the tm would retain nutrients in its stock because to doesn't overheat the contents. That said, I still make my broths on the stove - i actually do it outside on my induction hotplate on the lowest setting. I like to think cooking outside is environmentally friendly because there's no need for the exhaust to be on and the house doesn't have cooking smells (except for baking).
