Anzac Biscuits (egg, nut, refined sugar & wheat free)

These biscuits are dairy free, wheat free, egg free, vegan, nut free and naturally sweetened! And they could be made gluten free if you use gluten free flour instead of the spelt, and quinoa flakes (or gluten free oats) instead of the rolled oats.

This recipe makes about 20 - 25 biscuits, depending how big you make them.

Preheat oven to 180 degrees Celcius.

1. Mix in Thermomix on speed 3 until combined:
- 160g spelt flour (or gluten free flour)
- 100g Rapadura
- 100g rolled oats (or 70g quinoa flakes)
- 70g dessicated coconut
- 1/4 tsp fine sea salt


2. Mix together in a cup:
- 1/2 tsp baking soda
- 2 Tbspns boiling water


3. Add remaining ingredients to Thermomix and mix on speed 3 until combined, and beginning to clump together:
- 140g coconut oil (slightly melted)
- 1 Tbspn black molasses
- water & soda

The mixture should be able to be pressed together with your hands, and not fall apart.

4. Form mixture into walnut sized balls and flatten (with your fingers) on the greased trays, to about 5mm in thickness. Bake in moderate oven for 15 to 20 minutes, then cool on the trays so they'll get nice and crisp.

Jo, how do these compare to 'normal' Anzac Biscuits?  They look great, do you think people would be able to tell the difference?

Well I had this comment on my Quirky Cooking FB page today: "I made your anzac buiscuits and I have to say they are the best I have ever eaten. Everyone in the family loved them and they are so lovely and crunchy...will be making those again! Thanks"...
They are lovely and crunchy, and even though they don't have that real 'buttery' taste, they still taste really good! :)

will definately give these a try ..yum and i seem to have more and more symptoms of allergies after eating certain foods..think i will have tp get myself tested as im feeling more and more tired, problems with my eyes and throat constantly which is driving me nuts.  Also a mum i know at my DS school just found out her DS is allergic to gluten and peanuts and has no idea where to start so might have to pass on some of the gluten free recipes reconverted from the forum and translated of course as she doesnt speak english and doesnt yet have a thermomix...its all very new here, not thermomix but food allergies and available products etc etc..thanks for the recipe Jo..good to have a no wheat alternative.  She is italian so if anyone knows of an italian gluten free recipe site I would appreciate it.  Im yet to invite her to a demo also...thermomix would be great for her..oh well anyway sorry for babbling on thanks again jo  :)

Yeah, that sure sounds like food allergies, Frozzie.  :(  I'll have to keep an eye out for Italian gf recipes for your friend... They have a celiac society over there, so there should be something! She definitely needs a Thermomix!!  :)

Thanks Jo and thats what i thought but I have never been allergic to anything..its only been the last couple of years ihave started getting symptoms/reactions..anyway like i said have to get myself tested and my DD who has bad excema.  Its school holidays here at the moment but ill see my GF next week to talk to her and find out more, especially about what her DS likes to eat.. :)

By the way Jo your such a star for your recipe alternatives and im sure your kids must love that you do that and also good for anyone as I know how much wheat etc most people eat without even realising it...its in everything and as they say too much of anything is not good for you..allergic or not!

Thank you Frozzie!  :-* :-*  I agree about the wheat - too much wheat isn't good for anyone!! That's why I started avoiding it, and lo and behold my allergies began to go away!! :)  I think too much milk isn't good for anyone as well - I agree with Cyndi O'Meara that it should only be used as a condiment, not something we have every day in everything! (That is for those who can drink it at all - I can't!) :)

me either..cant stand milk and yoghurts arent much better..my dairy is cheese mainly (lucky i live in a country where there are so many types and varieties) and usually try sheep or goats milk and yoghurts as well as cheeses..actually some of my favs are from goats and sheep..if i drink milk i get all flemmy and blerk same with most icecreams and same with most dairy so dont often have it even though most medical practitioners say i should..DH however has a glass every morning..i cant and much prefer juice or tea  :)  soy milks are ok too but they have mixed views here and the latest saying they arent good for cancers etc ie if you have cancer your not allowed soy..dont know all the details jusst the chat amoungst people around here..im sure you know alot more about it though   :)
