Varoma chicken question

Hi everyone. I'm still enjoying my thermomix, with the exception of one day, I have used it everyday since Christmas day when I received it. I have a question I would appreciate some help with. I have cooked Baf's chicken twice and have been quite pleased with it--certainily how easy it was, except for the fact that the chicken was overcooked even thought I timed it and only coooked it for the specified time. Twenty minutes seemed too long, somehow.. I want to try Jo's coconut cashew chicken tomorrow night, but I'm worried that I will have a similar problem. Am I chopping my chicken too small, maybe? I would appreciate your help.

I haven't tried Baf's chicken (being dairy free), but I don't find mine overcooked when I make it - I cut it in about 1 inch cubes, maybe a little smaller. And if you marinate it in the garlic, ginger, tamari/soy sauce & sesame oil, it helps to tenderize it too. Also, use chicken thighs if it seems a bit tough to you - they always turn out lovely!

I haven't tried baf's chicken either - but I have cooked Jo's chicken in satay cashew sauce several times, using both chicken breast and thighs. I chop my chicken quite small (about 1cm pieces) because our littlest one doesnt cope well with big chunks of meat (they become ammunition to fire at his older brother
) adn everytime it has come out moist and tender and delicious.

Breast meat tends to dry out quickly - I put it in whole and dice it after it is cooked so it keeps its moisture.

Thanks Jo this meal was easy and delicious! And made mountains!
I kept the chicken quite chunky, probably more like 1.5 inch cubes, and also found the marinade kept the meat moist. Will try chicken thighs instead sometime and next time I make Baf's style of chicken, will try keeping it whole and cutting later. Thanks for your suggetions everyone.

when I make QC's dish I dice my chicken approx 1.5cm (ish). I prepare the jug and the Varoma at the same time, and then make the sauce last. Chicken seems to be cooked in the time and I could give it a bit longer if necessary. The sauce is a fantastic concoction.
