Robyn, I have a recipe( not converted) for a lemon and coconut impossible pie. I got it on a fact sheet from Burkes Backyard many years ago. 60g butter1/2 cup s.r flour3/4 cup castor sugar3/4 cup desiccated coconut3 large eggs11/2 cups milk1/2 cup lemon juicegrated rind of 2 lemonsput all ingredients except milk into a mixing bowl and beat until combined with balloon whisk. Add milk and whisk in. Pour into greased tin (lamington tin or something suitable for a slice) & cook in a preheated (180 celcius) oven for 50-60 mins until golden brown & set. Test with a skewer in the centre, it should come out clean. Serve warm with ice cream. Im not sure if anyone has posted anything similar as I haven't looked. It shouldn't be hard to convert cos I think it's pretty much chuck it all in!!
My poor little lemon tree only has 1 lone lemon on.
