partly cooking bread rolls

Hi, sorry if this has been asked before. ;D
i like cooking bread and rolls, has anyone made a huge batch, and partly cooked, then bake for a few minutes when ready to serve.

like the little ones you can buy in supermarkets.

if so, how long would you pre bake for.

I generally fully cook them and freeze, then spray with water and into hot oven to reinvigorate.

But would be worth trying to cook until about 90% done.  When they look like they would hold their shape but not too brown.  May even pay to cover them with foil or paper to prevent them browning too much on the first pass through the oven.

I do this regularly.  I cook for 10 minutes on the first bake (in a pre-heated oven so have to have already done the 2nd rise) then wrap them in foil to freeze.  Out of the freezer they seem to take about 15 mins (in pre-heated oven) but it depends on size so I keep an eye on them after about the first 10 minutes.

I sometimes fully cook and then just reinvigorate in the oven but I think the part-baked are nicer.

I also do what Thermomixer does.  With a French bread stick,  I leave it in the foil I have frozen it in and put it in the preheated hot oven for 10 mins, then unwrap it and give it another 5 to 10 mins.  depending what it needs for a nice crunchy crust.

I have just pat cooked some rolls and need to put them in the freezer but it isn't clear from the comments above if I should put them in the freezer while still hot or wait till they cool. Any suggestions?
