Mint sugar?

Hi all,

My DS has been enjoying making chocolate custard. Last time he made it we thought it would taste nice as choc mint. This had me wondering how to add the mint. I thought we could just add peppermint essence instead of the vanilla, and this got me thinking about vanilla sugar and if you could do a similar thing with mint.

So, does anyone see any problem with putting some peppermint leaves from the garden into some milled sugar to infuse the peppermint flavour - just as you would put a vanilla bean into sugar to make vanilla sugar?

Interesting concept. For chocmint custard I use choc mint lindt 30-50g in place of the cocoa per 500ml :)
