Gorgonzola Cheesecake (with photo)

Gorgonzola Cheesecake:

Ingredients:

10g gelatin leaves
120g crackers
90g butter at room temperature
200g milk cream
60g celery stick, finely chopped
50g walnuts
250g ricotta
250g gorgonzola (I use gorgonzola dolce)
Salt, black pepper

To decorate: walnuts, chives etc (I had some fennel leaves, I used them instead)


Preparation:
    * Soak gelatin leaves in cold water for 10 minutes
    * Powderize crackers for 5 seconds on Speed 7
    * Add butter and mix for 30 seconds on Speed 4
    * Cover a 22cm diameter cake tin with baking paper (I used a 24cm diameter one). Spread cracker mixture by pressing with a spoon. Let it rest in the fridge for 30 minutes
    * Warm cream for 3 minutes at 70ºC on Speed 3
    * Add well-squeezed gelatin leaves and mix for 30 seconds on Speed 4
    * Add celery, gorgonzola, ricotta, walnuts, salt and pepper. Mix for 20 seconds on Speed 5
    * Spread cheese mixture onto cracker base
    * Let it rest in the fridge minimum 3 hours. (I try to prepare it the day before when I can)
    * Take it out of the fridge and decorate with walnuts, herbs etc just before you serve

Tips/Hints: Even if I'd recommend this with Gorgonzola, Roquefort could be an alternative for those who can't find gorgonzola

I'd love to try this but I would need a few friends around to help me eat it.

You need to organize a get together then cookie. I would come for sure  :-)) ;)
If you like cheese, even gorgonzola, then this one is beyond great!
I had made this for my birthday. Everyone asked for the recipe and made it already!

I dont think I would need friends to help me eat this - I think I could quite happily scoff the lot myself  ;D ;D

This recipe has come at the perfect time Farfallina - we are having a lot of guests for our sons 4th birthday, and I have been looking for things to serve for the adults to eat - this looks just the thing!

I am the same girls! I can have it all with no problems! :)

KJH you can prepare this even the day before. So you'd have one thing less to prepare on the actual 'birthday' day

cookie if you can't find any guests maybe KJH would be willing to share a slice with you :)  ;)

Cookie if I thought Australia Post could deliver a piece to you in a way that was edible - you would certainly have a piece coming your way!

Or else you could always come over to Adelaide for a 4yo's party??!!   ;)

Will be there ....................in a few days. No sorry it's far too hot to be travelling at the moment unless I'm going down the south west of WA. In a week or two hopefully. We're back to being a 3 car family again and DD doesn't need to borrow DH's to get to work.

Am going to make this over the weekend - made a special trip to the markets to get the cheese - I just hope it lasts in the fridge until I get to make this! 

One question - I have powdered gelatin, not gelatin sheets.  How much of that should I use, and how should I prepare it?

I believe the cheese would last KJH, just keep in its package until you use it
I could recommend to prepare gorgonzola cheesecake on friday if you are gonna use it on saturday
You can decorate it on saturday before you serve it

About gelatin powder and leaf conversion....
I won't be able to give you an answer because I've never made such conversion
I checked on the web a bit, seems like its possible but I don't wanna say something wrong and ruin your cheesecake
If there is anyone who already made such conversion she could be of great help if posted here her experience!

You may need to melt gelatin powder before you add it into the mixture but then again I am not sure.
I hope someone can enlighten us about it

Thanks farfallina!  Maybe I will just go out any buy some gelatin leaves to make things easier.

I am sure the cheese will be OK - I was just worried that DH and I would eat it all as it is, before I get a chance to make the cheesecake  ;D ;D

Made this last night, and just tasted it this morning - very very delicious!

I made it in a square slice tin (18cm) so that I could easily cut it up into little squares for "finger food" at a picnic tomorrow.

I couldn't find leaf gelatine, so I used 10g of powdered gelatine dissolved in 80g of boiling water, and added it to the mixture with the celery, cheeses and walnuts.  It looked very sloppy at first, and I was really afraid that it wouldn't set - but this morning it had set beautifully!

Fantastic recipe - and cut up into little pieces is perfect for nibbles at a party or picnic.

Since you take it for picnic, make sure that you keep it cold so it wouldn't turn to be sloppy  ;)
