Advice please

I have only had my TM for 4 days and have made a few different things which have turned out great. I attempted the muffin mix in the EDC but also added banana and dark choc (nestle melts which I roughly chopped in TM first). My problem is..... When I went to put mix in patty cases, my bananas were still in massive chunks so should I have cut them smaller or mashed them in TM first or just mashed them with a fork instead? Any advice would be greatly appreciated  :)

You could mix them first in the TM which is what I do for the banana bread

Just what I was going to say. Whizz them in the TMX first and then proceed with your cake. No need to remove them I shouldn't think.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I do exactly as Meagan said  ;D I find if you leave them in the bowl you have less chance of over mixing the mix (that is what gives you a tough muffin ;))

on this note, what is the recommended speed and time for muffins in order to stop them  being tough? I've seen recipes for 40 seconds on speed 5 which I thought was a lot.

To be honest I use the turbo button about 3 or 4 times. Just quick pulses until it is all just mixed  ;)

I use  :: on a lot of my biscuits etc as I can stop when it is just mixed then.
May all dairy items in your fridge be of questionable vintage.

I've just added a Banana Muffin recipe to the forum. I've made it up from a few different ideas and recipes. It has a wet and a dry mix and these are mixed together in a bowl after each being individually mixed in the TMX.

This method makes for a lighter muffin.
