Name of Recipe:Versatile Lentil Sauce
Number of People:4-6
Ingredients:
1 onion cut in half
1-2 cloves garlic
1-2 tbs EVO (olive oil)
1 zucchini roughly chopped (no need to peel)
2 carrots roughly chopped (no need to peel)
250g lentils (rinsed)
1 tin tomatoes
500g water
1tbs veg stock concentrate (or to taste)
1tsp cornflour
Optional: 100g bacon/ham chopped up, cooked left over sausages, other veggies eg capsicum
Preparation:
1. Blitz onion and garlic for a few seconds on speed 5
2. Add EVO and cook 3 min/speed 1/100C
3. Add carrot and zucchini /other veggies and blitz for 2-3 seconds on speed 4-5 (check as you go, depend on how fine you want it)
4. Add all other ingredients and cook 16 min/ reverse speed soft/ 100C
5. Throw in bacon/cooked meat at about 12 min just to warm through

Tips/Hints:
I made this into 2 meals to suit different family tastes. I boiled some pasta on the stove for the kids and they loved it. After I cooked the lentils I put into the thermoserver and then cooked the biryani rice p94MOTM book and DH and I sprinkled some chilli, ground cumin & coriander to make it more like a daal. You could also use for lasagna or even tacos I think.
It is adapted from a Turkish soup recipe I was taught years ago, but in that case you were supposed to stir in stock as the lentils cooked (and no bacon in that one!!). I often add parsley/basil/oregano to make it more Italian.
I was so thrilled we could all eat food we enjoyed without making compromise on taste, we get bored of kids food and kids are not that adventurous with their eating.
