Fruit and Nut Loaf (Bread)

Hi
We have now had our TM for about one month and it is fantastic.I am now the family cook and my wife is so happy about that.We have regular rich creamy yoghurt in abundance, great bread, cookies Uncle Luigi's are great.The Apricot/chicken risotto I made last night and it is delicious.
I keep searcing for and wondering if anyone has ever made a fruit and nut bread loaf? I guess you could make the Hot Cross Bun recipe and add more fruit and nuts

Don’t know if this is what you are after, but I have roughly converted it for you from here and you can be the taste tester and let me know how it goes  ;D

FRUIT AND NUT LOAF

Ingredients:
Rind of half lemon (10 secs, Sp 7)
85g dried apricots
85g dried pears
85g dried prunes
50g dried figs
50g mixed nuts eg. almonds, hazelnuts, cashews
400g Plain flour
½ teaspoon salt
2 teaspoons (7g) dry yeast
250g lukewarm water


Method:
Grease a baking tray.
In a jug dissolve the yeast in the water.
Prepare the lemon rind, and set aside. Prepare the nuts (3 Secs, Sp 5) and set aside.
Add dried fruit to the TM and roughly chop (try 10 secs, Sp 5)
Add all the ingredients to the TM including the lemon rind, and Knead for 4 mins, Closed Lid, Interval Speed to make a soft-textured, heavy dough.
Leave in the TM bowl for 1.5 – 2 hours until doubled in size.
Then Knead for 1 min, Closed Lid, Interval Speed and turn onto floured work surface and turn into a round. Place on a baking tray and cover with a damp cloth; and leave to rise in a warm place for 1 hour or until doubled in size.
Pre-heat oven to 200 degrees C. Bake the loaf for 30-40 mins or until the surface is brown and loaf sounds hollow when tapped on the base. If it is browning too fast, cover it with a piece of alfoil.
Transfer to a wire rack to cool. The loaf keeps well for up to 5 days.

Thank you so much for taking the trouble to post these recipies. Really appreciated and I can't wait to get cooking.
We had family of 17 for lunch on Sunday and I made two lots of 5 seed bread and also made two lots of Apricot/Chicken Risotto Grandkids helped me make 3 lots of lemonade and it was all super successful.
Our TM really working overtime.
I have always made my own pasta with machine but always had trouble getting the dough right.The 3 egg recipe in book is too large a quantity for my wife and I so I just did a cup of plain flour, tablespoon olive oil, 1 egg and pinch of salt.Kneaded for just one minute and it is a great dough ,so easy to handle, rolls out super thin and makes top quality pasta.

Once again I really appreciate your assistance to this 78 year old guy who is just learning to cook. My wife Leigh loves it.

I am getting 5 grandkids over next week and we are making hot cross buns, they are all excited.Something that I can do to bond with the kids that doesn't involve advanced technology like I pads and those tech games they play. They just love to cook.

You are an amazing man Don, I take my hat off to you.  Sounds like the TMX is going to keep you amused for a long time and with such a big family to share your delicious cooking, I can't  see you losing the title of head cook of the family for a long time.  The grandchildren will benefit from your cooking lessons as well - start saving your money as they will all want a TMX for a wedding present one of these days.  ;) ;)

Congratulations Don, you should feel very proud. I had a very dear friend who took to cooking around your age and he created some lovely things. For his birthday we used to give him stock for his pantry as he gave it all away and was on a pension.
Keep it up. Using an ipad won't give the grandchildren food. :-*
May all dairy items in your fridge be of questionable vintage.
