Caramelised Onion and Cheese and pull apart
« on: April 24, 2011, 05:53:39 am »
I am tweaking this recipe and I think I have pretty much got it successfully converted  ;D

Place 250 g milk and 2 tsp sugar in TM31
Cook at 37 deg for 2-3 mins on speed 1 until the temperature light indicates it is warm enough

Add 2 tsp dry yeast (I keep mine in the freezer) and leave for 5 mins
Add 1/2 tsp salt (I use Maldon salt), 460 g plain flour, 50 g butter(melted) and an egg

Mix 5 secs on speed 7 then on knead for 1 1/2 minutes

Turn out, knead lightly and leave to rise for an hour

Meanwhile arrange your fillings - I have grated cheese (tasty and parmesan) and an onion fried off until it is caramelised. I used the TM31 to grate the cheese

Knock dough down, then roll or stretch into a large rectangle. Sprinkle with fillings then roll dough into a log
Cut the log into 8 pieces using the TM spatula then place the spirals on their side in a 20 cm round tin or silicon mold

Allow to rise till the tin is filled

Bake 180 deg 30 - 40 minutes

The filling could be sweet or savoury - anything you like

Welcome to the forum and congratulations on having your first post as a recipe. This looks delicious. I have some salami in the fridge and this in your recipe would make a lovely lunch tomorrow.

Mmmm, looks delicious! Will have to try that one.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
