Mixed Fruit Muesli Slice no nuts

Mixed Fruit Muesli Slice
Makes about 24 pieces
Ingredients
125g butter
½ cup honey
2 eggs
2 cups rolled oats
½ cup SR flour
1 teaspoon mixed spice
1 cup dried apricots
1 cup sultanas
3/4 cup dried apples (I didn't have any so I substituted dates, and dry blueberries)
1/3 cup dried cran berries
1/3 cup sunflower seeds
1/3 cup pepitas
Preparation
Preheat oven to 1800C
Grease a deep 20cm x 30cm slice tray. Line with baking paper.
Melt butter and honey on 60 speed 1 until melted. Set aside to cool completely.
Meanwhile chop any fruit that needs it, eg apricots, apples, dates. Set aside.
When butter mixture is cool, add eggs to bowl, speed 4, 6 seconds.
Add to the butter mixture and stir through well.
Place oats, flour, spice, all fruit and seeds into a large bowl. Mix well.
Add the butter/egg mixture add stir throough.
Press into prepared tray firmly.
Bake for 25-30 minutes.
When cool cut into squares. (I'm going to cut mine while still warm next time as it crumbles a bit)

This is from a magazine, I think Food Ideas. This slice doesn't look pretty but is very tasty
