Roo Balls in tomato sauce with pasta

Name of Recipe: Roo Balls in tomato sauce with pasta
Number of People: 4 - 6
Ingredients:
Roo Balls
500g kangaroo mince
2 cups fresh soft breadcrumbs
3 tbsp grated parmesan
handful of parsley
handful of fresh oregano (or 1 tsp dried)
1 egg
1/2 onion
Tomato sauce
1kg crushed tomatoes (we used a pasta sauce bottle as it was all we had)
handful of basil leaves
onion, peeled and quartered
1 carrot
1 zuchinni
1 clove garlic
1 tbsp olive oil
6 mushrooms
pepper to season
400g spiral pasta
Preparation:
Roo Balls (Makes about 24)
Make breadcrumbs as per EDC. Set aside.
Grate parmesan (want a bit extra to garnish). Set aside with breadcrumbs (keeping extra separate)
Add onion, parsley and oregano, chop at speed 8 for 5 seconds.
Return breadcrumbs and parmesan to bowl, add meat and egg.
Combine on speed 5 for approximately 10 seconds.
Remove from bowl and form into balls, approximately 1 tbsp per ball.
Shallow fry in combination of 1 tsp olive oil & 1 tsp vegetable oil. Set aside in Thermoserver.
Tomato Sauce
Chop onion, garlic, basil, carrot, zuchinni and mushrooms on speed 6 for 8-10 seconds.
Add olive oil and saute for 3 minutes on speed 1, temp 90.
Add tomatoes and pepper. Cook for 15 minutes, speed 1 at Varoma temp.
When cooked, add to Thermoserver and mix with meatballs.
Cook pasta as per directions. Place pasta into bowls and top with Roo Balls and sauce. Garnish with extra parmesan.

Tips/Hints:
Could replace the kangaroo with any other red meat.

mmn I might just use another meat

DH asked me to confirm that these were not roo testicles

I love my roo meat, the rest of the family isn't so fond of it - little do they know just how often I disguise it and they eat it

I love it too faffa. Although I am surprised to hear you say as you don't come across many who do or even who have tried it. Did you grow up in a country area? I find mostly those from country backgrounds are those who have tried it. My kids are sometimes worried about eating what I cook as they know all is not what it seems sometimes. Think I'll give this one a go and report back.

Well I grew up in Geraldton and it was certainly more country then than what it is now but my Mum grew up on the farm so I have the farming in my blood. Spent most of the school holidays on the farm - and did everything my male cousins from the farm did

Gosh don't remind me. Some of the things we used to urge the city cousins to do was rather naughty. We were fine as we did them all the time. eg bet you can't drive the go kart under the truck and stop in the middle. Ooh we were bad.
I know someone who minces roo in their TMX and no one in the family realises what they are eating.

i don't live on a farm - just near a Safeway that sells vacuum packed roo meat (only meat I buy away from the butchers any more). I started buying it as it was cheaper and better for you and better for the environment (or so they say anyway).
I would say it certainly has a distinct flavour - it doesn't taste like any other meat I've had. We have cooked it in lasagna (MOTM book), burgers, Quick Spanish Beef, and a few others. We have also had roo sausages and roo steak but I wasn't too keen on these.
I must admit though that the first time I had roo was to annoy my step-mother who was horrified at the idea of it. Worked a treat, particularly as both my brothers copied me and we hummed the Skippy song while eating...
