Name of Recipe: HealthyCoconut Creme Brulee (adapted from Peggy K's Kitchen Cures)

Ingredients:
1.5 teaspoons chia, ground
180g or1.5 cups raw cashews
1 cup or (270mL tin Ayam) coconut milk
1/3 cup or 45g coconut sugar
1 small ripe banana
1 teaspoon vanilla extract
1 tablespoon melted coconut oil
1 banana, thinly sliced
Extra coconut sugar
Preparation:
Place chia seeds in TMX and grind up for 3 seconds - Speed 7.
Add cashews, coconut sugar, ripe banana, vanilla extract, coconut oil and coconut milk and blend for 30 seconds - Speed 7.
Layer banana slices over bottom of four ramekins and then evenly divide cashew mixture between them.
Refrigerate for at least one hour.
Sprinkle a light layer of coconut sugar on top. Use a blowtorch to caramelise until golden brown OR put under grill for a few minutes if don't have a blowtorch. *I did the grill option but it was soft rather than the hard toffee you crack on a regular brulee.

Tips/Hints:
It tastes yummy but the top for me was different to a regular brulee. Would be interested to find out if anyone has better results if they have a blowtorch.
