Cup of soup

Name of Recipe:corn and zucchini
Number of People:
Ingredients:
1 onion
30 mls of olive oil
 Kernels of 2 corns
300gram zucchini
1 lt water
1 tablespoon veg stock or to taste
4 sun dried tomatoes
Salt and pepper to taste


Preparation:
Sauté onion with oil 2 mins
Add reaming ingredients

Cook on varoma 20 mins speed 3

 Puree mixture in bowl in small batches. How much soup can you blend at once?

JD - No problems with pureeing all of that at one go fundj.  Start slowly at a low speed and work your way up to speed 9. Don't hold the MC down when blending soups. Delicious, quick and everything on hand although I did use canned corn.  Pureed for 30 seconds.  Makes enough for 5 large mugfuls.

Denzelmum - My tweak - using what I have, half onion and half leek (from the garden), half zucchini, and three corns (don't have semi dried tomato).  I didn't puree it too smooth, still have texture, DH loves this. It's more yellowish as I use more corn.

Fundj your recipe looks tasty. We're going into Shark Bay today or tomorrow for stores so I may give it a try up here. It's overcast today.

I think I might just have to try this as well. I love soup but the rest of the family is a bit fussy. At least soup is easy to freeze.

If you start to increase your speed slowly you shouldn't need to put a tea towel over the lid JD - another thing I have found is to have the flat side of the MC down like this |_|  with the opening up. The steam seems to hit this and just flow up the side of the MC instead of catching up under the opening if it is the other way :)

I just don't trust it not to blow up into my face like a pressure cooker did once Kathryn. I have the MC up the way you described and it has never been a problem but it makes me feel a bit safer even though I am still nervous whilst doing it  :-)) :-))

You are probably right with the reduced time with boiling water fundj if someone wants to get the soup done quicker.
