Hi Stef, welcome to the wonderful world of Thermomix!! It's great to be able to cook from scratch so easily, and know what's going into your food, isn't it!  We avoid wheat, dairy and refined sugar, and additives, preservatives, colours and soy as much as possible too.  I make my own chocolate without soy lecithin! Recipe here! Couldn't bear to not have ANY chocolate!!  ;)

Hope you get lots of inspiration here, and we look forward to your recipes!! Will checkout your FB page, being a FB addict and all... I have a blog and FB page for allergy friendly recipes called 'Quirky Cooking'. :)

lucky for me i still can have dairy..  but all the rest of chemical foods is out of the house.. The last weeks i canned about 60 kilo of tomatoes.. that makes almost a year suply :) you should see my celar: it is full with glass cans: jams, pickallily, ketchup, tomato, applesauce, poached pears, chickenstock, and so on.. And now with my thermomix i can try out so many new things :)

hey Jo,

i just made my chocolate but i used organic cane sugar ... it just set and the taste is amazing!   love the recipe and tnx sooo much :) i am sharing with everyone  :p

Hi Stef, I just break it into bits and freeze or refrigerate it in a ziploc bag - I don't think I've had a problem with it crystallizing, but maybe that's because it doesn't last long here! ha ha  :D

here it is my new made chocolate.. i like the chocolate a bit more bitter so this is the recipe
125 sugar+1 vanilla pod - pulverised 1 min speed 8
250 gr cocoa butter 37 ° -20 minutes speed 1
add the sugar  - 37° - 20 minutes speed 1
add 200 gr of cocoa powder - 20 minutes speed 1

1 pinch of salt


for hazelnut chocolate: take 60 gr of hazelnuts, ground at 4 for 20 seconds
add at the end of the program and stir 37 ) 1 minute speed 1

That's great Stef - looks wonderful!! I'd LOVE to get some chocolate moulds like that - never seen them!
