I just put a small ball of boccini cheese into my risotto ball, egg & crumb & I shallow fry.

Any risotto would work for sure, a big fav in our house.

Thanks everyone, especially Judy. We have made arancini in the past with left over risotto - pumpkin, pine nut and bacon is a favourite of ours. I was interested to see Nicco's recipe.

Wonder I can pm the recipe if you still want it--the base risotto was fairly plain, so I'm sure that the ones you have made would be just as lovely.  It have found his recipe handy for those times when you don't have leftover risotto and are starting from scratch.
