Chicken Sausages with Oven-Roasted Capsicum Mayo:

Ingredients:
650g chicken
4 spring onions
1 clove garlic
1 cup white breadcrumbs
1 red capsicum. roasted, peeled and de seeded
½ cup mayonnaise
Preparation:
For the mayo, put roasted capsicum into bowl and wizz, add mayo and combine thoroughly. I left mine slightly chunky. Place in fridge until required.
Clean bowl.
Cut the chicken into chunks and mince on speed 4. You may need to do this in 2 lots. Set aside.
Peel onion. cut into 2cm lengths and place in bowl.
Add 2 slices frozen bread. Turn into crumbs, speed 7-8 until done.
Add garlic (I used Tenina's garlic paste). chicken, salt and pepper and mix on speed 3 until combined.
Roll into small sausages.
These can be oven baked or I just cooked them in a tiny bit of EVOO.
Serve with the mayo.
