Mango Lime Chicken

Name of Recipe:Mango Lime Chicken converted from an Annette Sym recipe in Book 5.
Number of People: 2 but can be doubled
Ingredients:
2 shallots cut into 5cm pieces
1 large confit clove of garlic
1 tsp confit garlic oil
250g chicken tenderloins cut into 3 pieces (I remove the thick white sinew)
1 tsp veg stock concentrate
1/2 tsp lime zest
1 tbspn lime juice
120g mango cubes (I had some in the freezer so I drained them & reserved juice for this recipe - 45 mls)
125 mls low fat evaporated milk
1 tbspn cornflour
1/2 tsp sweet chilli sauce
S & P to taste


Preparation:
Chop spring onions and garlic 2 sec/speed 5.

Add the oil and saute 2 mins/varoma temp/speed 1.

Distribute the chicken evenly around the blades and cook 3 mins/varoma temp/reverse/speed 1.

Add veg stock concentrate, lime rind and the 45 mls mango juice.

Cook 5 mins/varoma temp/reverse/speed 1.

Add the mango cubes, chilli sauce & evaporated milk mixed with the cornflour.

Cook 3 mins/varoma temp/speed 1/reverse.

Serve over rice and with steamed vegies if desired.

That sounds like a really interesting mix of flavours, it won't be the same with cashew or madacamia nuts or tofu instead of the chicken, but I am sorely tempted to try this one out as a vegetarian alternative.

You could try it Marina, it would probably work with tofu.  I added the chilli sauce bit, thought it might need a little bit more flavour than the original recipe  Some people could handle more chilli sauce than I used though.  I know my Mum is going to love this one.

I like the sound of this one too.  Will try it when mangoes are back in season or would tinned ones be ok?

The recipe uses a 420g can for this recipe Julie including the juice but remember I halved the recipe.
