Beef, Fish & Chicken Stock
« on: July 18, 2011, 01:47:11 pm »

After making the vege concentrate stock i am eager to make the meat stocks, am curious how long the stock will stay good for???? And does it need to be kept in the fridge or freezer???? I love that the veg stock can stay in the fridge so im hoping i can do the same with meat stocks

Susie, I freeze all my stock - the vegie one stays soft and can be spooned out easily.  I haven't done the chicken one but the beef one ended up in the freezer too in little knobs - so easy to just pull one out if you freeze them on a tray then transfer them to a ziplock bag. That way you don't have to worry about expiry dates.

what about freezing in icecube trays then transferring to a bag??  Mine is keptin the fridge so havent tried the freezing one but i guess the flavours would be fresher from the freezer?
