Best Muffin Recipe

Does anyone have a great muffin recipe preferably choc or vanilla or maybe banana, I find the EDC recipe is quite heavy tasting and not as fresh tasting as say packet muffins.

When I get my TM back tomorrow I would like to do some baking for school recess times and things I can freeze.

My favorite is the Jamie O sponge recipe...

225gm caster sugar, cream with 225gm butter.
add 4 eggs, one at a time
add zest of 1 lemon (optional)
add 1 tsp vanilla extract
fold through 225gm's SR flour.

bake 170, 12 mins.

I've often wondered about the merits of using the TM for mixing muffins.
One of the cardinal rules in muffin baking is to not over-mix the batter - this will make them heavy and tough.
The batter should only be just blended together, lumpy is quite ok, generally about 20 stirs of a wooden spoon.
I always make them in a bowl as it is just as easy as and easier to clean.

I'm not a muffin expert, just a chocoholic ;D.  This was the first recipe I made in the TM from the Taste TM Recipe thread, so a sentimental favourite (thanks Rara  ;D)
