Hi Erica and welcome.  There are quite a few vegetarians on this forum now.  A good book to get your hands on would be Rainbow Recipes by Aileen Sforcina see this link for more information.

Hi Erica, welcome to the forum.  Plenty of recipes here to choose from as well as the vegetarian books available from H.O. & the one mentioned above.  I have both and we are meat eaters but I get away with serving the odd meatless meal up to DH and have posted a few myself.  Have fun and please do share your recipes with the rest of us.

Hi and welcome Erica, Great to see so many new TM owners (or soon to be). We are building quiet a large community here. You will find heaps of recipes to try here, and if you need to know anything then you only need to ask.

Hi Erica, well done in getting a TMX.   Look forward to hearing about your recipes, substitutions & explorations.

I've made a couple of meat dishes in EDC successfully in TMX by substituting the meat for pulses.  My first main meal was a really nice shepherd's pie using the EDC recipe, the ragu I used cooked lentils & split peas instead of meat and liquid smoke instead of pancetta.  I should get the vegetarian & vegan books but I've got so many cookbooks (not alone on this one!).

As you would know already it's a great tool for making non-dairy milks & creams and I made a nice first attempt at cashew passionfruit cream from Quirky Jo's blog.  I'm not vegan but definitely vegan friendly and like to try new things.  When I went vegetarian 2 years ago I put on weight because I was so excited at all the new tastes, world cuisines and experimenting with the huge variety of foods; definitely not a limiting or depriving dietary choice.

All the best,

Viv, Sunshine Coast

Welcome to the forum Erica. Like Judy since having my TMX we have vegetarian meals because they are so easy. My DD enjoys them and DH doesn't mind as long it's no more than 2 or so a week.
I've found the TMX vegetarian book to have some tasty things in it. Quirky Jo's blog is wonderful too.

Hi Erica

Welcome Erica!

I cook for vegetarian teenagers and my huband and I say we are vegetarians who eat meat!  By that we mean we love vego food but also eat meat.  You will find heaps of vegetarian options.  I find the tmx vegetarian book quite useful and it has alot of info about vegan cooking. (My kids aren't allowed to be vegan til they leave home!)  The tmx Indian cookbook also has lots of great vegetarian options.

Some of the things we like: are quirky jo's lentil bolognaise http://www.forumthermomix.com/index.php?topic=4286.0
Cyndi O'Meara's sausage rolls http://www.forumthermomix.com/index.php?topic=5376.0
Okonomiyaki http://www.forumthermomix.com/index.php?topic=6882.0
Farfallini's zuccini sauce (we like it served with ricotta gnocci from the TMX vegetarian cookbook) http://www.forumthermomix.com/index.php?topic=3706.0
Cookie's Chick pea, spinach and fetta tart -- I have one in the oven at the moment http://www.forumthermomix.com/index.php?topic=3461.0
My conversion of chickpea and spinach curry http://www.forumthermomix.com/index.php?topic=6044.0

That's just for starters . . . so you will find plenty to keep you busy!  I find the tmx really great for making "patty" type dishes, so much quicker and easier and less messy than all that grating, mixing etc.

Have fun!
