Chocolate Cream Biscuits

Chocolate Cream Biscuits

INGREDIENTS

130g butter
20g raw sugar
150g plain flour
100g cornflour
150g melted chocolate (milk or dark)
90g condensed milk

30g butter, extra
80g icing sugar (I made my own in the TM)
1tsp vanilla paste
90g condensed milk


METHOD

1. Preheat oven to 190 or 170 if you have a fan forced oven. Line a baking tray or two with paper and olive oil spray.

2. Cream butter and sugar for 20 seconds on Speed 6.

3. Add flour, cornflour, melted chocolate and condensed milk. Mix for 10 seconds on Speed 3, scrape down the sides of the TM bowl and mix again for 10 seconds on Speed 4.

4. Roll teaspoons of the mixture into balls and place onto tray. You can use a fork to lightly press down if you like. Cook for 10 minutes and allow to cool. I only have 1 tray so I end up making 3 trays full out of the mixture.

5. Place extra butter, icing sugar, vanilla paste and condensed milk into TM bowl. Mix for 10 seconds on Speed 7, scrape down the sides of the TM bowl and mix again for 10 seconds on Speed 7.

6. Spread a generouse amount of cream mixture onto a biscuit and sandwich with another biscuit. Pop into the fridge straight away to allow the cream mixture to set a little.

nqchic,  thanks for this recipe.  It is similar to the one in the Nestles book that Safeway are giving out free,  BUT  this recipe is better.
I made the one in the book but the mixture was a bit dry.  The increases in butter and Sweetened Condensed milk should solve this problem.  Thanks again.

Do they go soft after filling?
