Cocoa Biscuits (with photo)
« on: October 24, 2011, 03:58:36 pm »

Cocoa Biscuits Ingredients:

50g sugar
120g butter, cut into pieces, at room temperature
1 egg, at room temperature
220g flour
35g unsweetened cocoa powder
1/4 tsp baking soda

Chocolate Topping Ingredients:

120g chocolate
25g milk
Optional: candy sprinkles, pearls

Preparation:

Powderize sugar for 20 seconds on Speed 10
Add butter and mix for 30 seconds on Speed 4
Add egg and mix for 10 seconds on Speed 4
Sift in flour, cocoa and baking soda. Mix for 20 seconds on Speed 4. Clean down the sides and gather together with Spatula. Knead for 30 seconds on Speed 5
Wrap with plastic film and let it rest in the fridge for half an hour
Flour lightly the surface. Roll out dough as a thin layer. Remember to flour your rolling pin every once in a while so that the dough wouldn't stick
Shape your biscuits by using cookie cutters or another item such as a glass, cup, espresso cup etc. (You will have 2 trays of cookies with this recipe)
Bake in preheated oven at 180ºC for 20 minutes.
    Let them cool

Chop chocolate for 10 seconds on Speed 7
Clean down the sides of TM Bowl with spatula, add milk and melt chocolate for 3-4 minutes at 50ºC on Speed 2
Fill piping bag or paper cone with chocolate, decorate your biscuits as you wish. You can use pearls, candy sprinkles.. etc.
Let them rest until chocolate dries. (Alternatively, instead of using paper bag you can dip your biscuits partially or completely in melted chocolate and then place them on baking paper until the chocolate dries)

Afiyet olsun...

Notes:
With this recipe you can prepare some beautiful biscuits which won't crack during baking so it would make them very easy to decorate.

I used milk chocolate for topping when I made them for the first time. Since the biscuit itself is not very sweet it seemed to me it would be too strong with dark chocolate. I've recently made them again and this time tried with dark chocolate topping and I liked it! It depends on one's preference as always. Also white chocolate could be a nice alternative.

I am not an expert when it comes to using a piping bag but working on it. I prepared my piping bag myself by using baking paper. I cut a very small hole due to my needs and I found it much easier to work with.

You can see this video if you would like to prepare your "paper cone". Even if it looks very easy to make, it requires a couple of practices.

Sinem, oh those look yummy. Think I'll try them, cut them into Bat shapes and feed them to trick or treaters :)

Thanks for sharing.
