Egg Whites
« on: March 09, 2009, 11:24:17 pm »
Any one can help?
Silly me, bought 9 egg whites which come in a bottle with a good sell by date for a bargain price. However, thought I would try them out, as have never bought them in a bottle already separated and ready to use, but now the time is running out, have only 2 days left, guess I can use a couple in fruit sorbets, but has anyone got a good idea of what I can do with the remaining 7 egg whites, except a meringue, as my kids aren't too keen on that.  :( In the worst scenario I could freeze them all individually for more sorbets.
Don't suppose anyone has a fantastic recipe which can help me use them up ;)
Pleeease....

some flourless cakes use whipped egg whites as the base.

i'm sure i've seen one recently but can't remember if it was online or in one of my gluten free cookbooks

Friands use only egg whites.  I haven't made any using the Thermomix, but you could possibly adapt a friand recipe. They're verry nice to eat.
May all dairy items in your fridge be of questionable vintage.

Oh my god!
I made the friands, they were amazing! Obviously I have no friand tins, so I just made them in cup cake silicone moulds, and they were to die for. Don't know if they were as they are supposed to be ....but they went very quickly! I made the coconut and lime ones in the THX, and will make strawberry ones at the weekend, along with the apricot slices as I have now have bought apricots. ;D

Bron, I'm glad you liked the friands. I don't have friand tins either and just use cupcake tins. I'm sure the shape doesn't really matter.

There's been more discussion on the apricot slice Bron so check it out before you make it.

Thanks, have seen the amendments.
Haven't had a chance to make it yet, as have the kids down with coughs etc and they are very clingy ::)
Hope to this weekend, to accompany the iced coffee and rice pudding ice-cream!!!

Missed this, sorry Bron.  One dish that I love with egg whites is a Chinese style "steamed" scrambled egg whites.  Sounds strange but it is delicious.

I don't have the recipe that I use at work, but there are some available on the 'net.  An example is here : http://www.chinesefood-recipes.com/chinese_egg_recipes/steamed_egg_whites_recipe.php
